As Director of Operations, AMY KNOLL FRASER is responsible for all day-to-day operations, including managing administrative systems, bookkeeping, guest relations development and staff training. But along with her successful track record of restaurant management, Knoll cultivates the inviting qualities that GRACE's reputation is built upon.
After graduating Cum Laude from the University of Kentucky with a dual major in Painting and Art History, Knoll began working at the Hyde Street Bistro in San Francisco's Russian Hill district. She then relocated to Los Angeles and spent two years as Assistant Manager at Delmonico's Seafood Grille.
With a growing wealth of knowledge on operating high-profile establishments, Knoll moved on to Rix in Santa Monica, where she was named Assistant General Manager. At the 160-seat Rix, Knoll honed her skills at running a large, busy restaurant, which staffed more than 75 employees. Along with her many administrative duties, she continued to develop her creative side by overseeing the promotional design work. Knoll eventually took her executive skills to Hans Rockenwagner's Rock, in Marina Del Rey, as Consultant/General Manager.
In her myriad roles at GRACE, Knoll's deep appreciation for fine arts adds a sophisticated and alluring tone to the dining experience; while her dedication to quality of service ensures a professionally framed meal for each guest.
